Air fryers cook faster than most people expect the first time, so check at 75% of the recipe's stated time when cooking a food for the first time in your specific model.
Air fryers are often marketed as 'oil-free cooking,' which is misleading. Most foods still need a small amount of oil to brown properly. Oil promotes the Maillard reaction (browning), prevents sticking, and helps seasonings adhere. The amount is dramatically less than deep-frying — typically 1 teaspoon to 1 tablespoon for a full basket of food versus cups of oil for deep-frying. A spray bottle with neutral oil (avocado, light olive) is the most practical tool. Foods with high natural fat content (bacon, skin-on chicken, fatty sausages) need no added oil. Clean the basket after every use. Grease buildup accelerates smoking and creates off-flavors in subsequent cooks. Most baskets are dishwasher-safe (check your manual), but a quick hand wash with dish soap and a non-abrasive sponge takes two minutes and keeps the non-stick coating intact longer. Occasionally wipe down the heating element and interior walls with a damp cloth when the unit is completely cool. Never use abrasive cleaners, metal scourers, or oven cleaners on non-stick surfaces — they strip the coating and affect food safety and performance.
