Most packaged chicken sausages are pre-cooked and just need to be heated through. Raw chicken sausages (often found at butcher counters) need the full cooking time and must reach 165°F (74°C) internally. Check the label to determine which type you have.
Place sausages in a single layer in the basket. Air fry at 375°F (190°C): pre-cooked sausages take 6–8 minutes; raw sausages take 10–12 minutes. Flip halfway through. For split or sliced sausages, reduce time by 2–3 minutes.
Score the casings diagonally every inch before cooking. This allows fat to render out and lets the sausage develop a more appealing browned surface. Avoid piercing raw sausages — the juices will drain out and the sausage will be dry.
Slice and serve in hot dog buns, with peppers and onions, over pasta, or alongside eggs. Chicken sausage pairs well with mustard, marinara, or a simple grain salad.
