Air fry breaded pickle slices at 400°F for 8–10 minutes, flipping halfway, until the coating is crispy and golden. Pat pickles very dry before breading — moisture is the enemy of crispiness.
Remove pickle slices from the jar and spread on a paper towel. Press firmly with more paper towels and let rest for 5 minutes. Repeat with fresh paper towels. This step is critical — wet pickles cause the coating to steam instead of crisp.
Set up a flour station (seasoned with garlic powder and cayenne), an egg wash, and a panko-breadcrumb station (seasoned with smoked paprika and salt). Dredge each slice through all three stations, pressing the breadcrumbs firmly to adhere. Spray lightly with oil.
Arrange in a single layer in the basket without overlapping. Air fry at 400°F (205°C) for 8–10 minutes, flipping at the halfway mark. They are done when the coating is deeply golden and audibly crunchy when tapped.
Serve with ranch dressing, remoulade, or a spicy aioli. Fried pickles are a great party appetizer and can be kept warm in a 250°F oven for up to 15 minutes after cooking.
