Arrange frozen samosas in a single layer without touching. Spray lightly with oil all over. Air fry at 375°F (190°C) for 12–15 minutes, carefully flipping at the halfway mark. The pastry should be deep golden-brown and audibly crispy.
Samosa wrappers are more delicate than egg rolls — flip carefully with tongs to avoid cracking. Some cracking is normal and doesn't affect taste. If they are cracking excessively, lower the temperature to 360°F.
The filling should reach 165°F for meat samosas. For vegetable samosas, the filling is pre-cooked and just needs to be heated through — the golden exterior is your main guide.
Serve with mint chutney, tamarind sauce, or raita. If the pastry looks done before the filling is hot, lower to 350°F for the last few minutes rather than continuing to brown the outside.
