Trim the dark green tops and root end. Slice in half lengthwise. Fan the layers under running water to rinse out any trapped dirt. Shake dry and pat with a paper towel — excess water causes steaming instead of caramelization.
Brush cut sides with olive oil. Season with salt, pepper, and optionally a pinch of thyme or parmesan. For a richer version, drizzle with cream and parmesan in the last 3 minutes of cooking.
Place cut-side up in the basket. Air fry at 375°F (190°C) for 12–15 minutes. The outer leaves will crisp and the cut face will caramelize. A fork should slide in easily from top to bottom when done.
