Baking powder (alkaline) raises the surface pH of the chicken skin, which accelerates the Maillard browning reaction and causes the skin to dehydrate and puff into a crackling shell rather than remaining leathery. For the best results, apply the baking powder mix and refrigerate the wings uncovered for 1–8 hours before cooking — the skin dries out further in the refrigerator air.
