Season lamb chops generously and air fry at 400°F for 7–10 minutes, flipping once, for medium doneness. Rib chops cook faster than loin chops, so check with a thermometer — 145°F is medium-rare, 160°F is medium. Rest for 3 minutes before serving.
Rib chops (about ¾-inch thick) are the air-fryer sweet spot — they cook quickly and their fat cap renders beautifully. Loin chops are thicker and need a minute or two of extra time. Bring chops to room temperature for 15 minutes before cooking for more even results.
Lamb loves bold aromatics. A simple rub of olive oil, garlic, rosemary, salt, and pepper is classic and takes just two minutes to apply. Press the seasoning firmly into the meat so it adheres through the cook.
Preheat to 400°F. Cook rib chops 7–8 minutes flipping once, or loin chops 9–11 minutes. Use an instant-read thermometer: 130°F for rare, 145°F for medium-rare, 160°F for medium. The air fryer's circulating heat gives an excellent crust without a hot pan.
Rest cooked chops on a plate tented with foil for 3–4 minutes — this redistributes the juices and keeps the meat tender. Serve alongside roasted vegetables or a simple salad for a restaurant-quality dinner in under 20 minutes.
