Place frozen mac and cheese bites in a single layer in the basket. Air fry at 390°F (200°C) for 7–9 minutes, flipping at the 4-minute mark. They are done when the breading is deep golden and crispy and the cheese filling is hot through. Do not exceed 10 minutes or the cheese may burst out.
Make mac and cheese, spread it 1 inch thick in a baking dish, and refrigerate until completely firm (at least 2 hours or overnight). Cut into squares or use a round cutter. Dredge in flour, egg wash, and panko breadcrumbs. Freeze the breaded bites for 30 minutes before air frying. Cook at 380°F for 8–10 minutes per side — the freeze-first step prevents the cheese from melting out before the coating crisps.
Leakage occurs when the coating does not crisp fast enough and the filling melts through. Key prevention: cook from frozen (not thawed), use adequate breading, and do not go above 390°F. If making homemade, double-breading (flour, egg, breadcrumb, egg, breadcrumb) provides extra insurance.
Serve with marinara sauce, ranch, or sriracha mayo for dipping. These are excellent party appetizers or snacks. Keep a large batch warm in the air fryer at 250°F with the basket slightly ajar for up to 10 minutes after cooking.
