Air fry soft shell crab at 400°F for 8–12 minutes, flipping halfway, until golden, crispy, and cooked through to 145°F. Clean the crab before cooking — remove the gills and apron.
If not pre-cleaned, lift the soft shell and remove the spongy gills on both sides. Flip and remove the apron (the small flap on the underside). Rinse briefly under cold water and pat dry. Cleaning can be done by your fishmonger upon request.
Season flour with salt, pepper, and Old Bay. Dredge the crab in seasoned flour, then dip in egg wash, then coat with seasoned panko. Press the breading firmly. Spray generously with oil.
Place breaded crab in the basket. Air fry at 400°F (205°C) for 8–12 minutes, flipping carefully at the halfway mark. The breading should be golden-brown and the crab should be firm throughout. Verify internal temperature reaches 145°F (63°C).
Serve in a sandwich on soft rolls with remoulade, lettuce, and tomato, or as a plated appetizer over greens with lemon. Soft shell crab season peaks in late spring and summer — plan accordingly for freshest results.
