For most foods, yes — preheating an air fryer for 3–5 minutes produces noticeably better results. A cold basket means the food sits in a warming environment during the critical first minutes, which steams the exterior instead of searing it. Preheating delivers the immediate blast of hot circulating air that creates crispiness. The exceptions are very thick or large items (whole chicken, thick pork roast) that benefit from a gentler start, and foods that go from freezer to fryer where a cold start gives the center time to thaw before the outside over-cooks.
An air fryer is a compact convection oven. When you place food in a cold air fryer and then start heating, the food's surface temperature rises slowly alongside the appliance — the same way a conventional oven does when you forget to preheat. The result is a longer total cook time and a softer, less golden exterior. Preheating brings the air fryer to operating temperature first, so the moment food enters the basket it experiences full-intensity hot air. This is especially significant for thin, quick-cooking foods: chicken wings, fries, bacon, shrimp.
Most air fryers preheat to cooking temperature in 3–5 minutes. Set the temperature you plan to cook at and run the fryer empty for that time. Do not place accessories (foil, parchment, silicone liners) in the basket during preheat unless weighted down — the fan will throw them into the heating element. Some newer models (Ninja Foodi, Cosori Pro II) have a dedicated Preheat button that handles timing automatically and beeps when ready. If yours does not have that feature, a simple kitchen timer works fine.
Foods with long cook times — a whole chicken (30–40 min), thick bone-in pork chops, a full-size baked potato — are not significantly affected by whether the air fryer was preheated. The extended cook time means any temperature difference in the first few minutes is absorbed. Similarly, very thick frozen foods (large frozen chicken breasts, thick frozen burgers) actually benefit from a cold start, which gives the center time to thaw before the exterior sets. Delicate baked goods like muffins or cake also do not require preheating.
Smaller basket-style air fryers (2–4 qt) heat up in about 2–3 minutes and the preheat benefit is high. Larger oven-style air fryers (10–26 qt) take 5–8 minutes to preheat fully and the benefit is even more pronounced — their larger internal volume cools down more between cooks. Dual-zone fryers like the Ninja DZ401 have separate zones that preheat independently. Check your model's manual: some brands specifically advise against preheating certain functions (dehydrate, proof) where a gradual temperature rise is intentional.
