Press extra-firm tofu for at least 15 minutes to remove excess moisture, then cube it and toss with a little oil and seasoning. Air fry at 375°F for 15–18 minutes, shaking halfway, until the outside is deeply golden and crisp. The result is far crispier than pan-frying with a fraction of the oil.
Extra-firm tofu is the only variety worth air frying — silken or firm tofu holds too much water and turns rubbery. Wrap the block in a clean kitchen towel, place a heavy pan on top, and press for at least 15 minutes. The drier the tofu, the crispier the final result.
Cut pressed tofu into ¾-inch cubes for even cooking. Toss with 1–2 teaspoons of neutral oil, soy sauce, garlic powder, and a pinch of cornstarch — the cornstarch is the secret to an extra-crisp shell. Let it marinate for 10 minutes if time allows.
Preheat your air fryer to 375°F. Spread tofu in a single layer — never stack — and cook for 15–18 minutes, shaking the basket at the halfway mark. For extra crunch, flip individual pieces with tongs at the shake point.
