Air fry thinly sliced apple chips at 300°F for 12–15 minutes, flipping once halfway, until dried and crisp. Low temperature is essential — higher heat browns them before they dry out.
Use a mandoline or sharp knife to cut apples into 1/8-inch slices. Thinner slices crisp faster; thicker ones stay slightly chewy. Remove seeds but leave the skin on for color and fiber. Pat slices dry with a paper towel to speed drying.
Toss slices with a tiny amount of oil (optional) and season with cinnamon, a pinch of sugar, or leave plain. For a tart chip, a dusting of citric acid powder enhances the apple flavor.
Arrange in a single layer — overlap leads to steaming instead of crisping. Air fry at 300°F (150°C) for 12–15 minutes, flipping at the halfway mark. Start checking at 10 minutes; thinner slices finish faster.
Chips crisp up significantly as they cool — remove them when they feel leathery and slightly firm, not yet crunchy. Spread on a rack and let cool 5 minutes before judging doneness. If still soft after cooling, return for 3–4 more minutes.
