Place frozen egg rolls in a single layer without touching. Spray lightly with oil. Air fry at 390°F (199°C) for 10–12 minutes, flipping at the halfway point. The wrapper should be blistered, golden-brown, and very crispy.
Egg rolls need space for the hot air to circulate all around. Cooking too many at once results in soggy spots where they touch. Work in batches for the crispiest results.
Some frozen egg rolls burst open when cooked at high heat because steam builds up inside. Score the end of each egg roll with a small knife (one or two small cuts) to allow steam to vent while cooking.
Serve with sweet and sour sauce, duck sauce, soy-ginger dipping sauce, or hot chili oil. Egg rolls are also excellent sliced on a bias and served over rice or noodles.
