Quick Answer
Air fry stuffed peppers with pre-cooked filling at 350°F for 15–20 minutes until the pepper is tender and the filling is hot throughout. Using pre-cooked filling ensures even cooking without underdone raw meat.

Halve bell peppers lengthwise or cut off the tops. Remove seeds and membranes. Blanch in boiling water for 3 minutes if you want very soft peppers, or skip blanching for a firmer texture with more bite.
Cook the filling before adding it to the peppers: brown ground beef, turkey, or sausage with onion, garlic, and diced tomatoes. Add cooked rice, quinoa, or beans. Season well and stir in shredded cheese. The filling should be flavorful on its own since the pepper adds sweetness and the cook time is limited.
Pack filling firmly into pepper halves or whole peppers. Place in the basket. Air fry at 350°F (175°C) for 15–20 minutes. Add shredded cheese in the last 5 minutes of cooking. The pepper should be tender when pierced and the filling steaming hot — check with a thermometer if using meat filling (165°F/74°C).
Serve with sour cream, salsa, hot sauce, or a simple tomato sauce. Stuffed peppers reheat well in the air fryer at 350°F for 8–10 minutes the next day.
