A dehydrator runs at about 95–165°F for 4–12 hours or more, gently pulling out moisture without cooking. That low, even temperature spread across a wide tray area is exactly what proper dehydrating needs, and it is where dedicated units excel.
Many air fryers now include a dehydrate mode, usually running around 120–170°F. It genuinely works for small batches — a tray of apple slices, a modest batch of jerky, or drying herbs. The limits are capacity (a single basket versus a dehydrator's many stacked trays) and minimum temperature (some air fryers cannot go as low as delicate items need). For occasional drying it is handy; for regular or large batches it falls short.
Choose an air fryer if you mainly cook and want the option of occasional light drying. Choose a dehydrator if you regularly make jerky, dried fruit, or preserve garden produce in quantity, or need precise low temperatures. The two are complementary rather than interchangeable — an air fryer with a dehydrate mode covers casual needs, while a dehydrator is the tool for serious preserving.
