Food sticks to an air fryer basket for two main reasons: not enough oil on the food's surface, or a degraded non-stick coating on the basket. The primary fix is to lightly brush or spray the basket with oil before adding food, and to lightly oil the food itself. For delicate items (fish fillets, glazed chicken), a perforated parchment liner eliminates sticking entirely without blocking airflow. Avoid aerosol sprays directly on the basket — they degrade the non-stick coating over time and make the problem worse.
Food sticks when proteins or starches bond to the basket surface at high temperatures with no lubricating fat between them. This is the same mechanism as sticking to a pan on the stovetop. In an air fryer it is compounded by the rapid temperature rise — food dropped into a 400°F basket immediately starts forming bonds before any moisture can evaporate. Delicate proteins (fish, egg-based coatings, raw marinated chicken) are the most prone to sticking. Starchy foods (potato wedges, breaded items) also stick more than dense proteins because the starch gelatinizes and forms a bond with the basket grate before a crust forms.
Use an oil mister or a pastry brush to apply a thin, even coat of high-smoke-point oil (avocado, refined coconut, or light olive oil) directly to the basket before adding food. Do not use aerosol cooking sprays (like PAM) directly on the basket — the propellant chemicals in pressurized cans break down non-stick coatings over time, creating micro-pitting that makes sticking progressively worse. If you use an aerosol, spray it onto the food before placing it in the basket, not onto the basket itself. Re-oil the basket between batches when cooking multiple rounds.
Pre-cut perforated parchment rounds sized for air fryer baskets are the most convenient solution for consistently sticky foods. They provide a non-stick surface, are inexpensive, and the perforations maintain airflow to the food's underside. Silicone liners are a reusable alternative — dishwasher-safe and effective. Aluminum foil formed into a tray shape also works for items that would otherwise drip or drag. The key rule for any liner: always put the food on the liner before starting the fryer — a bare liner in a hot, running fryer will be blown into the heating element by the fan.
A healthy non-stick coating is the best long-term defense against sticking. Never use metal utensils (forks, tongs with metal tips, steel brushes) to remove food — use silicone, wood, or nylon tools. Hand-wash the basket in warm soapy water with a soft sponge rather than running it through the dishwasher frequently — repeated dishwasher cycles slowly erode the coating. If the coating is already visibly scratched, flaking, or pitting, replace the basket insert — most brands sell replacement baskets, and a new one is significantly cheaper than a new air fryer.
