Protein surfaces that start cooking in a hot environment brown faster and retain more interior moisture, the same principle as searing in a hot pan versus starting in a cold one.
To 300°F (150°C): 1.5–3 minutes across all sizes. To 350°F (175°C): 2–4 minutes. To 375°F (190°C): 2.5–4.5 minutes. To 400°F (205°C): 3–5 minutes. To 425°F (218°C): 3.5–6 minutes. To 450°F (232°C): 4–7 minutes. Smaller baskets (2–3 qt) preheat at the lower end of each range; large 8+ qt baskets at the higher end. These are general estimates — your specific model's wattage and insulation affect exact times. Many newer models include an audible preheat complete indicator.
Preheating is optional for: foods with very long cook times (35+ minutes for large bone-in cuts) where the temperature equilibrates regardless; reheating tasks where you are not trying to restore crispiness; and when cooking in batches where the basket is already hot from the previous batch. You can also skip preheating if cooking small, thin items that reach temperature quickly anyway (thin fish fillets, shrimp, asparagus spears). Never skip preheating for frozen foods if you want crispy results — the first few minutes at temperature are critical for removing ice-crystal moisture before it steams the coating.
Newer air fryers (Cosori, Ninja, Instant Vortex) often have a built-in preheat mode that runs for a set time and beeps when ready. For older or simpler models, run the air fryer at your target temperature for the times listed above, then load food. Some users place a small piece of bread or a paper towel in the basket: when it starts to brown or warm, the basket is preheated. An infrared thermometer aimed at the basket grate is the most accurate method — when the grate surface reads within 10–15°F of your target, you are ready. Most manufacturers suggest 3 minutes as the default preheat, which works for the 350–400°F range in medium-sized units.
