Air fry frozen fish sticks at 400°F for 10–12 minutes, flipping halfway, until golden and crispy with an internal temperature of 145°F. No oil spray needed for most commercial breaded fish sticks.
Fish sticks go straight from freezer to air fryer — no thawing. Arrange in a single layer without overlap. Air fry at 400°F (205°C) for 10–12 minutes, flipping at the 5-minute mark. They are done when the breading is deep golden and the fish inside flakes easily.
Cut white fish (cod, pollock, haddock) into 1-inch strips. Season flour with salt and pepper, dip in egg, then coat with seasoned panko. Spray lightly with oil. Air fry at 400°F for 8–10 minutes, flipping once. The coating should be very crispy.
The biggest mistake is overcrowding. Overlapping fish sticks steam each other. If you have a lot, cook in two batches. A light spray of oil on homemade sticks before cooking dramatically improves crispiness.
Serve with tartar sauce, malt vinegar, or ketchup. Fish sticks are excellent in tacos with coleslaw and hot sauce, or served alongside chips and mushy peas for a British-style meal.
