Air fry parsnip sticks or chunks at 400°F (200°C) for 15–18 minutes, shaking halfway through. They caramelize beautifully with natural sweetness that intensifies in the dry heat — far better than steamed parsnips.
Peel parsnips and cut into sticks (French fry shape) or chunks of similar size for even cooking. Sticks work especially well — they look like fries and cook evenly. Toss with 1 tablespoon of olive oil, salt, pepper, and optional honey (1 teaspoon adds beautiful caramelization).
Air fry at 400°F (200°C) for 15–18 minutes. Shake at 7–8 minutes. Parsnip sticks are done when they are golden and crispy on the outside with a tender interior. Thicker chunks may need 18–20 minutes. The natural sugars in parsnips caramelize readily so watch them toward the end.
Parsnips have a subtly sweet, anise-like flavor that pairs well with warming spices. Try: cumin and coriander, curry powder, or a maple-Dijon glaze applied in the last 3 minutes. Fresh thyme or rosemary added before cooking infuses the oil with herbal flavor. A squeeze of lemon after cooking brightens the natural sweetness.
For thin parsnip chips, slice paper-thin with a mandoline. Toss with oil and salt. Air fry at 375°F for 8–10 minutes, checking and removing chips individually as they brown at different rates. They crisp up as they cool. Season immediately after cooking.
