Air fry a quesadilla at 370°F (188°C) for 4–5 minutes per side. The tortilla crisps up and the cheese melts fully without needing butter in a pan. Cut into wedges immediately after cooking.
Assemble the quesadilla on a cutting board: lay a large flour tortilla flat, add shredded cheese and fillings to one half, and fold. Or stack two tortillas with cheese between them. Lightly spray both sides with cooking spray. Air fry at 370°F (188°C) for 4–5 minutes, flip carefully, then cook another 4–5 minutes until golden and the cheese is completely melted.
The main challenge is flipping without the quesadilla opening. Press a toothpick through the center to hold the halves together, or use the folded half-moon method (fold one side over rather than stacking). Remove any toothpicks before eating. Alternatively, place a small piece of foil on top for the first 3 minutes to keep it flat, then remove for the flip.
Shredded chicken, beef, sautéed peppers and onions, black beans, and cheese are all ideal. Avoid wet fillings (fresh tomato, watery salsa) inside the quesadilla — they create steam that makes the tortilla soggy. Add cold toppings like sour cream, guacamole, and fresh salsa only after cooking.
Remove the quesadilla immediately after cooking and cut into wedges with a sharp knife or pizza cutter. The tortilla continues to crisp slightly as it cools but softens quickly if covered. Serve with salsa, guacamole, and sour cream on the side.
