Slice halloumi into 1/2-inch slabs or cubes. Air fry at 400°F (200°C) for 6–8 minutes total. Flip slabs at 4 minutes. Cubes can be shaken instead. The cheese is ready when both sides are deep golden-brown with visible caramelization. Do not cook beyond 8–9 minutes or it will become rubbery.
Halloumi has a high fat content that baste-fries itself in the air fryer. Adding oil is optional — a light spritz of olive oil spray can enhance browning and add flavor, but is not required. Do not use butter as it burns at the temperatures needed to crisp halloumi.
For extra flavor, marinate halloumi slices for 15–30 minutes in olive oil, lemon juice, dried oregano, and a pinch of chili flakes before cooking. Pat slightly dry after marinating so excess moisture doesn't create steam. Honey drizzled on after cooking adds a sweet contrast to the salty cheese.
Halloumi pairs well with roasted vegetables, salads, wraps, and grain bowls. Serve immediately after air frying — halloumi squeaks and bounces when hot but becomes dense and chewy as it cools. Reheat leftovers at 380°F for 2–3 minutes if needed.
