Shred russet potatoes and squeeze out as much moisture as possible using a clean towel — this step is critical for crispiness. Season with salt, pepper, and a teaspoon of oil. Frozen patties come pre-seasoned. For fresh hash browns, beyond basic salt and pepper try smoked paprika, garlic powder, or diced onion mixed in before cooking. Add fresh herbs (chives, parsley) after cooking so they don't burn. Serve immediately with ketchup, sour cream, or hot sauce.
