Air fry mozzarella sticks at 390°F (200°C) for 6–8 minutes from frozen, flipping once at 4 minutes. The breading becomes golden and crispy while the cheese melts inside without leaking.
Cook frozen mozzarella sticks at 390°F (200°C) for 6–8 minutes. Flip them at the 4-minute mark. They are done when the coating is golden-brown and the cheese is visibly soft through the ends. Do not go beyond 8 minutes or the cheese will burst out of the breading.
Cheese leakage happens when the breading cooks too slowly or the temperature is too high and the cheese melts faster than the coating sets. Cooking from frozen (never thawed) and sticking to 390°F minimizes leakage. Some brands benefit from a light spritz of cooking spray to help the breading crisp before the cheese melts through.
Always arrange mozzarella sticks in a single layer with space between them. Stacking causes uneven cooking — the bottom sticks stay soft while the top ones overcook. If cooking a large batch, do it in two rounds and keep the first batch warm at 200°F.
Frozen store-bought mozzarella sticks work better in the air fryer than homemade because commercial breading is formulated to stay closed. If making from scratch, double-bread the sticks (flour, egg, breadcrumb, egg, breadcrumb), freeze for at least 1 hour, and then air fry at 375°F for 8–10 minutes.
