Air fry chicken leg quarters at 375°F for 35–40 minutes, flipping halfway, until the skin is crispy and the internal temperature reaches 165°F. These larger pieces need more time than drumsticks alone.
Pat leg quarters completely dry with paper towels — this is the single most important step for crispy skin. Score the skin with a sharp knife in 2–3 places to help fat render out. Season generously with oil, salt, pepper, garlic powder, paprika, and your preferred spice blend.
Place skin-side down in the basket first. Air fry at 375°F (190°C) for 18–20 minutes, then flip skin-side up and continue for another 17–20 minutes. Total time is 35–40 minutes. Verify 165°F (74°C) in the thickest part of the thigh, avoiding the bone.
Dry brining helps enormously: salt the chicken uncovered in the refrigerator for 4–12 hours before cooking. The salt draws out moisture and then reabsorbs, seasoning the meat deeply while drying the skin surface.
Rest for 5 minutes after cooking. Leg quarters have a lot of surface area for juices to redistribute. Serve with roasted vegetables, rice, or mashed potatoes.
