Air fry a small beef roast (2–3 lbs) at 360°F for 35–45 minutes until the internal temperature reaches 145°F for medium or 160°F for medium-well. Rest for 10 minutes before slicing.
Eye of round, chuck roast, and top sirloin roast all work in the air fryer. Smaller roasts (under 3 lbs) fit most baskets and cook more evenly. Very large roasts may cook unevenly — consider cutting them in half.
Pat the roast completely dry with paper towels — surface moisture prevents browning. Rub generously with oil, salt, pepper, garlic powder, and fresh or dried herbs (rosemary and thyme work well). Let the roast sit at room temperature for 30 minutes before cooking for more even results.
Air fry at 360°F (180°C) for 35–45 minutes. Use an instant-read thermometer to check doneness: 145°F (63°C) for medium, 160°F (71°C) for medium-well. For a crispier crust, increase to 400°F for the last 5 minutes.
Rest the roast on a cutting board tented with foil for at least 10 minutes — the internal temperature will rise 5–10°F during this time. Slice against the grain for the most tender results.
