Air fry mahi-mahi fillets at 400°F for 10–12 minutes until the internal temperature reaches 145°F and the fish flakes easily. This firm white fish holds up well to the high heat of an air fryer.
Pat fillets completely dry with paper towels. Brush with olive oil. Season with salt, pepper, garlic powder, and paprika. A squeeze of lime juice and cumin gives a great taco flavor. Let the seasoned fish rest 5 minutes before cooking.
Place fillets in a single layer in a lightly oiled basket. Air fry at 400°F (205°C) for 10–12 minutes. Mahi-mahi does not need to be flipped if the fillet is under 1 inch thick. For thicker fillets, flip at the halfway mark and add 2–3 minutes.
Use an instant-read thermometer to verify 145°F (63°C) at the thickest point. Alternatively, press the fish with a fork — it should flake cleanly into large pieces and show no translucency in the center.
Serve in fish tacos with mango salsa and chipotle crema, over rice with a tropical pineapple-ginger sauce, or simply with lemon butter and roasted vegetables.
