Air fry salmon patties at 390°F for 12–15 minutes, flipping once halfway, until golden and crispy on both sides and heated through to 145°F internally.
Combine canned or cooked salmon with breadcrumbs, egg, diced onion, Dijon mustard, lemon juice, salt, and pepper. Mix until combined. Form into 1/2-inch-thick patties about 3 inches in diameter. Refrigerate for 15 minutes to firm up before cooking.
Spray the basket and both sides of the patties with cooking oil. Air fry at 390°F (199°C) for 12–15 minutes, flipping carefully at the halfway mark. The patties are done when they are golden-brown on both sides and reach 145°F (63°C) at the center.
The refrigeration step before cooking is critical for holding patties together. If they are still very fragile, add another tablespoon of breadcrumbs to the mixture. Handle gently when flipping — use a wide spatula for support.
Serve on a bun with tartar sauce and coleslaw, over greens with a lemon-dill dressing, or alongside roasted vegetables. Salmon patties reheat well in the air fryer at 350°F for 4–5 minutes.
